Ayurvedic Vegetable Stir-Fry - Nature's Basket - NZ

Ingredients:

  • 2 cups mixed vegetables (such as carrots, bell peppers, zucchini, broccoli, and mushrooms), sliced
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ginger paste
  • Salt to taste
  • Fresh coriander leaves for garnish

Directions:

  1. Heat the ghee or oil in a pan and add cumin seeds.
  2. Add the mixed vegetables and sauté for a few minutes until they start to soften.
  3. Add coriander powder, turmeric powder, ginger paste, and salt.
  4. Mix well and sauté for a few minutes.
  5. Add a little water and cover the pan with a lid. Let it cook on medium heat for 10-15 minutes until the vegetables are tender.
