Ayurvedic Aloo Gobi - Nature's Basket - NZ

Ingredients:

  • 2 medium-sized potatoes, peeled and diced
  • 1 medium-sized cauliflower, cut into small florets
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 2 tablespoons ghee or oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Directions:

  1. Heat the ghee or oil in a pan and add cumin seeds.
  2. Add the diced potatoes and sauté for a few minutes until they start to turn golden brown.
  3. Add the cauliflower florets, turmeric powder, coriander powder, red chili powder, garam masala, and salt.
  4. Mix well and sauté for a few minutes.
  5. Add a little water and cover the pan with a lid. Let it cook on medium heat for 10-15 minutes until the vegetables are tender.
  6. Garnish with fresh coriander leaves and serve hot with rice or roti.
